Dishwashing Staff or Kitchen Stewarding: Which Does Your Site Need?

Understand the difference before you quote.

Two roles that often get mixed up

"Dishwashing staff" and "kitchen stewards" are often used as if they mean the same thing. They overlap, but the scope you ask for decides what you get, and what you pay for.

What dishwashing staff usually cover

  • Operating the dishwashing machine and keeping the wash area running through service
  • Manual washing of pots, pans and kitchenware
  • Sorting, stacking and clearing ware so the pass and cooking line are not held up
  • Basic wash-area cleaning at the end of the shift

What kitchen stewarding adds

Stewarding is usually broader. On top of dishwashing, a steward may support general back-of-house cleanliness, waste handling, floors and drains in the kitchen, and tidy storage and receiving areas, depending on what is agreed.

How to decide which one your site needs

  • Where does the backlog actually happen: at the wash area, or across the whole back of house?
  • Do you need someone to keep the kitchen clean between services, or only to keep ware moving?
  • How many hours and which shifts need cover, and are there weekly or seasonal peaks?
  • Is there a kitchen lead on site who can direct the person on shift?

What to write down before you ask for a quote

  • The tasks included, in plain words
  • Shift times, days per week and the peak periods
  • Who provides equipment, chemicals, uniforms and protective gear
  • How relief cover is arranged if someone is unavailable

A clear written scope makes quotes easier to compare and avoids disagreements later. Availability, employment arrangements and qualifications are confirmed during scoping.
