Pick the window first

The hardest part of a deep clean is rarely the cleaning. It is finding time when the kitchen is not producing food. Overnight windows, a scheduled closure day or a quiet period between seasons are common choices. Agree the start and finish time in writing, including when the kitchen must be ready to cook again.

Define the scope clearly

  • Which equipment and surfaces are included: cooking lines, fryers, ovens, walls, splashbacks and floors
  • Which areas are not included, such as exhaust ducting or grease traps that may be handled as separate services
  • Whether any equipment needs to be moved or switched off first

What your team may need to prepare

  • Clear or cover food and stored items
  • Switch off and isolate equipment as advised
  • Arrange after-hours access and building notifications
  • Brief security or management if work extends overnight

Questions to ask before booking

  • Who performs the work, and how many people are on site?
  • What equipment and chemicals will be used, and who supplies them?
  • How is waste handled?
  • What happens if work overruns the agreed window?

Handover and records

Ask for a simple handover: a completed checklist and, where agreed, photos of the finished work. This gives the morning team confidence that the kitchen is ready and gives you a record for your own files.
