Coverage, access and documentation.

Why it matters

Grease collects in kitchen exhaust systems over time. Left unattended it can become a fire risk and affect how well the system draws. Regular cleaning is part of running a safe commercial kitchen.

Confirm exactly what is covered

  • Hood and canopy degreasing
  • Filter cleaning
  • Accessible ducting and fan components
  • Anything that is not included, and who would handle it

Some sections may not be reachable without access panels or specialist equipment. Ask how inaccessible sections are treated, and whether a specialist contractor is needed.

Access and timing

  • Which hours the work can take place, and how long the kitchen must be closed
  • How the team will reach the roof, risers or ceiling spaces, and who arranges building access
  • How surrounding equipment and food areas are protected during the work

Frequency

How often an exhaust system needs cleaning depends on the type and volume of cooking. Ask your contractor to recommend a schedule based on your menu and operating hours, and check any requirements from your landlord or building management.

Documentation

Ask what you will receive when the job is done: a service record, before and after photos where agreed, and a note of anything that could not be reached. Keeping these records makes future scheduling and inspections easier to manage.
